AUBERGINE SALAD

INGREDIENTS

Aubergine/brinjal roasted, peeled and Diced 1 large
Onion Halved And Seperated 1 Large
Tomatoes Seeded and Diced 1 Large
Red Bell Pepper Diced 100 Grams
Walnut Kernels Minced
Garlic 1 Tbsp
Lemon Juice 1 Tbsp
Fresh Parsley 2 Tbsp
Olive Oil 2 Tbsp
Salt To Taste
Fresh Promegranate 1/2 Cup
AUBERGINE SALAD


Prep Time : 31-40 minutes
Cook time : 0-5 minutes
Serves : 4

METHOD:

  • Combine aubergine, onion and tomato in a bowl and mix lightly.
  • Add walnuts, garlic and lemon juice and toss to mix. Add 1 tablespoon chopped parsley, olive oil and pomegranate pearls and toss well. Add salt, mix again and refrigerate for 1/2 hour.
  • Serve chilled garnished with remaining chopped parsley.
