BABYCORN, BEAN SPROUTS AND CUCUMBER SALAD WITH LEMONY BASIL DRESSING

INGREDIENTS

For Salad:

Spring Onions Chopped 1/2 Cup
Fresh Mushrooms Blanched And Sliced 1/2 Cup
Babycorn Blanched And Sliced 1/2 Cup
Bean Sprouts 3/4 Cup
Red And Green Capsicum Cubes 1/2 Cup
Cucumber Cubes 1/2 Cup

For Dressing:

Olive Oil 1 Tsp
Garlic Chopped 3 Cloves
Fresh Basil Leaves Finely Chopped 1 tbsp
Lemon Juice 2 Tsp
Sugar Substitute 1 Sachet
Salt To Taste
BABYCORN, BEAN SPROUTS AND CUCUMBER SALAD WITH LEMONY BASIL DRESSING


Prep Time : 10 minutes
Cook time : 5 minutes
Serves : 4

METHOD:

For Dressing:

  • Heat the oil in a non-stick pan, add the garlic and sauté till it browns lightly.
  • Add the basil leaves and mix well. Cool completely.
  • Add the lemon juice, sugar substitute, salt and pepper and mix well.

How To Proceed:

  • Combine all the ingredients in a bowl and toss lightly. Refrigerate.
  • Just before serving, add the dressing to the salad and toss well.
  • Serve immediately.
