For Salad:

Carrots Peeled 2
White Cabbage Finely Shredded 2 Cups
Lettuce, Shredded 1/2 Cup
Celery Finely Chopped 1 Piece Stalk
Capsicum Thinly Sliced 1
Cheese Cubes 1/2 Cup

For The Eggless Mayonnaise:

Skimmed Milk Powder 3 Tbsp
Mustard Powder 1/2 Tsp
Black Pepper Powder A Pinch
Lemon Juice 1 Tsp
Oil 2 Tbsp
Salt To Taste

For Dressing:

Eggless Mayonnaise 3 tbsp
Fresh Curd 1 Tbsp
Red Chilli Flakes 1/2 Tsp
Salt To Taste

For Eggless Mayonnaise:

  • In a bowl, mix the milk powder, mustard powder, black pepper powder and salt.
  • Add 1 tablespoon of warm water and mix well.
  • Add the oil drop by drop and keep whisking. As the mixture gets thicker, add a little lemon juice.
  • Keep adding the oil and whisking continuously.

For The Salad:

  • Cut the carrots into thin sticks.
  • In a serving bowl, put the carrots, white cabbage, lettuce, celery stalks, capsicum, cheese cubes and the dressing and mix well.
  • Chill and serve.
